I’m making a start on my first ever batch of Rose Petal Jam and have beheaded Lady Emma Hamilton – many of her in fact – for the purpose….

The petals have been carefully picked over to remove any unwanted joyriders but no more. They had not been sprayed with chemicals, obviously this is important – jam with your scone?  added myclobutanil and acetamiprid anyone?

I’ll write up my progress tomorrow, in the meantime the scrunched-up petals will be macerating overnight with some dry sugar – so that their perfume infuses the sugar crystals – and with the addition of water, lemon juice, more jam sugar (with added pectin) and the appropriate alchemy, we shall have (I am sure!) a delicately coloured, sweetly fragrant jam.
